BS Stuffed Peppers

Ingredients
1/4 cup - White Rice
2 Tbsp - Butter
1 Medium Onion, finely chopped
1 lb. Lean Ground Beef
6 Whole Green Peppers
1 Egg, lightly beaten
1 cup - BS Sauce
1 1/2 cups Tomato Basil Pasta Sauce

 

Directions

 
 
  1. Use small saucepan, add rice and 2/3 cups water, simmer of 10 to 15 minutes or until water is absorbed
  2. Use a large skillet at medium high heat, sauté onions in the butter for 5 minutes.  Stir as the onions cook
  3. In a large mixing bowl add cooked rice, cooked onions, lean ground beef and egg, mix well
  4. Season stuffing mixture with salt and pepper to taste
  5. Set stuffing mixture aside while preparing the peppers and the sauce
  6. Wash and then cut the tops off the green peppers, remove the seeds and ribs
  7. Fill the peppers with the stuffing mixture
  8. In a saucepan large enough (5 to 6 quart) to hold the 6 peppers standing upright, mix together the BS Sauce (Shake bottle well before pouring) and tomato basil pasta sauce
  9. Place the 6 peppers in the sauce mixture, standing them upright (Make sure the peppers will not fall over as they cook)
  10. Place a lid on the saucepan and simmer the peppers for 1 hour (at the end of 1 hour check to see that filling is cooked throughout, if not cook an additional 10 to 15 minutes)
 
 

Options

 
  Top the peppers with a touch of BS Sauce before serving
Use Red or Yellow Peppers or a mixture of colors in place of Green peppers
Add 1/4 cup chopped jalapeno peppers to stuffing mixture at step 3 above
